For Kitchen Suppression Systems, UL300 found that:

  • Wet chemical systems, installed to manufacturers specifications and properly configured, successfully extinguish fires in commercial kitchens
  • Dry chemical kitchen suppression systems were not successfully extinguishing fires in commercial kitchens
  • The reason dry chemical systems failed was the substitution of vegetable oils for animal fats as the predominant cooking medium and also the use of higher efficiency cooking equipment
